Chili Mango Peanut Chicken Salad

A quick, no-cook summer salad made with juicy mango, rotisserie chicken, and a spicy-sweet peanut dressing!

What you need

cup persian cucumber

cup apple cider vinegar

cup rotisserie chicken
cup fresh blueberries

avocado

cup sesame oil

cup extra-virgin olive oil

cup mango
tbsp tamari soy sauce

cup salted peanuts

cup creamy peanut butter

tbsp honey

clove garlic clove

cup green onion

cup Mango Fruit Puree

cup cabbage
Instructions
1. To make the dressing. Combine all ingredients in a blender. Blend until creamy, adding water as needed to thin. Season with salt. 2. To make the salad. In a salad bowl, combine the greens, chicken, cucumbers, herbs, and blueberries (if using). Pour over half the dressing, then toss to coat the greens. 3. Add the mangos, avocados, and peanuts. Pour over the remaining dressing. ENJOY the yumminess!
